“Persimmon's Colombia Hoshi comes from the Huila department in southern Colombia, home to the Nevado del Huila volcano and a patchwork of microclimates that reliably turns out sweet, clean and bright coffees. The lot is washed, grown between 1,500 and 1,600 masl and roasted medium light. The name nods to hoshigaki, the Japanese dried persimmon, and the cup carries hoshigaki, apple butter and apricot.”
