Highlights
“El Vergel is the Bayter family's farm in Fresno, Tolima. They arrived in 1995 growing avocados, planted coffee varieties after the avocado price collapse in 2006, moved into natural processing in 2018 with guidance from Miguel Jimenez, and built a reputation on controlled fermentation and their koji work. The operation now runs with Martha Montenegro and partners Elias and Shady. Pink Borbon Punch starts with a 12-hour pre-fermentation in plastic tanks, then 24 hours sealed and anaerobic, four days in a mechanical silo, 20 days on raised beds in the sun and 30 days stabilising in GrainPro. The result is bold and winey, with apple, blackberry, blueberry, malic acid and plum. This is the espresso roast of the lot.”
