“Passenger went back to a 2023-24 harvest lot from Ratnagiri Estate in India ahead of a run of new Indian coffees. Cherries are picked to Brix targets, sorted, pulped and fermented for 92 hours in flushed stainless-steel tanks, then given a fresh-water soak and dried on raised beds. Mr. Ashok's control over that long fermentation is what keeps the cup clean instead of vinegar-edged: strawberry and kiwi up front, vanilla wafer cookie and honeydew melon in the finish.”
