“Isaac Espinoza Florez is a pioneering specialty coffee producer in the Cusco region of Peru, specifically in the La Convencion province, Inkawasi district, Pacaybamba area. His farm San Roman sits at approximately 2,050 meters above sea level, where large day-night temperature differences allow cherries to mature slowly, developing high density and complex sweetness. Isaac was one of the earliest producers in this region to focus on specialty coffee, maintaining traditional farming methods while carefully refining quality at every step. The farm uses organic fertilizers, and after harvest the coffee undergoes a carefully controlled fermentation process before being dried slowly for about 20 days on shaded raised beds, maximizing aroma and sweetness while uniformly reducing moisture.”
