“COCANO is a coffee and cacao producing cooperative in northwest Haiti. Working with countless families growing small amounts of coffee in their own gardens, they buy cherries from villages in the mountainous northwest and operate a model farm on Totí island. Since 2011, Panther has collaborated with COCANO, visiting farms, building raised drying beds, and providing roasting feedback. Haiti's heirloom Typica variety, adapted to mild Caribbean climate, combined with organic inputs and meticulous care creates exceptional sweetness and full body.”
