Highlights
“Danche is a subdistrict of Gedeb in Ethiopia's Gedeo zone, an area whose coffees regularly outshine the rest of the district. This lot is an aggregate from smallholders delivering to Habtamu Fikadu Aga's Danche washing station: cherry is sorted and mechanically depulped on arrival, fermented for 24 hours, hand-washed free of remaining mucilage, then dried on raised beds for 9 to 12 days, shaded from direct sun and turned regularly with moisture readings along the way. Landrace varieties grown between 1,950 and 2,300 masl, sourced through Falcon Coffee and roasted light by Paloma in Brooklyn. Honeydew, kiwi and chamomile in the cup.”
