“Old Soul builds this decaf from smallholder lots in the mountains of Chiapas and Oaxaca, chosen on flavour profile and physical preparation before decaffeination. The Royal Select water process pre-soaks the green coffee to open the beans, then draws caffeine out with a solution of concentrated coffee solubles so the flavour compounds stay put. Roasted medium: dried fig, cocoa and molasses.”
