“Kainamui Factory serves approximately 1,800 smallholder farmers who are members of the New Ngariama Farmers Cooperative Society in Kirinyaga, Kenya. Ripe cherries are depulped on the same day they are harvested, then undergo 24-48 hours of fermentation before being washed through water channels and soaked underwater for 12-72 hours. The parchment is dried slowly on African raised beds.”
