Coffee here is typically grown by smallholder farmers on tiny garden plots, often alongside other food crops in integrated farming systems. Most farms operate traditionally and organically by default, with generations of knowledge shaping the way coffee is cultivated and harvested. The combination of high elevation, cool climate and rich biodiversity creates ideal conditions for producing coffees with exceptional floral complexity and clarity. About the Lot At the Chelbesa wet mill, ripe cherries are meticulously sorted before undergoing 36-72 hours of fermentation in concrete tanks . The coffee is then washed clean and dried slowly on African raised beds for 8-12 days , with careful shading and regular turning to ensure even drying and preserve cup clarity. This patient and controlled process results in a cup that feels vibrant yet composed.
