“Wilder Lazo is a veterinarian who took over the family farm, Bella Alejandría in San Adolfo, Huila, with his brother in 2016 and brought a scientist's approach to rebuilding the soil. This lot began as 2 kg of Ethiopian Sidamo green coffee a partner carried back from Germany in 2019: only 2.7% germinated, and those seedlings are now 1,000 heirloom bushes growing between 1,800 and 2,100 metres. Processed as a straight natural with no added fermentation and dried on raised beds, it is wild strawberry and ripe peach lifted by orange blossom florals.”
