“Ají Fellows Farms is a washed Colombian coffee from the Fellows Farms project run by Inmaculada Coffee Farms, founded in 2010 by the Holguín Ramos family in Pichindé, in the Andes above Cali, Valle del Cauca. The project buys cherries from neighbouring smallholders in Huila and Cauca at a premium — including the AMCAPEC association of women coffee growers — and processes every lot at Finca La Inmaculada for full traceability. The rare Ají variety, harvested in 2026, was grown between 1,700 and 2,000 metres under shade trees without synthetic fertilisers.”
