“Hugo Gualaco is a second-generation coffee producer based in San Adolfo, Huila. The farm spans 3 hectares dedicated to coffee cultivation, where most tasks are carried out manually allowing for meticulous care. For this lot, the cherries underwent an extended fermentation for two days, were depulped without washing, and then directly dried on raised beds. The resulting cup profile is a true reflection of Hugo's unique approach to farming and processing.”
