“The second 2026-harvest coffee Newbery Street has taken from the Jijón family comes from Finca Soledad, in the Intag Valley of Ecuador's Imbabura province, where Pepe Jijón has worked with Sidra, Typica Mejorado and Gesha for fifteen years. Sidra Wave Hybrid is a micro-lot put through the farm's Wave Hybrid process: four days of cold storage, twelve days of natural drying, then rehydration, depulping and three final days in the cold room as a honey coffee. The lot is grown at 1,550 m, roasted light and packed in 4 oz / 113 g bags. The roaster publishes no tasting notes for it.”
