“Region: Bajawa, Ngada, Flores Island (Indonesia). Farm: Ikang. Varietal: Kartika, Timor Hybrid, Caturra. Altitude: 1300-1500m. Process: Yeast-fermented Washed. Tasting notes: Watermelon, Green Apple, Earl Grey. An exceptional coffee for all the right reasons. This lot from the Bajawa region on the island of Flores opens with a fresh, summery impression, carried by clear aromas of watermelon and an acidity reminiscent of green apple. The finish evokes Earl Grey tea, with a delicate and fragrant expression. Mahataman Coffee Bajawa is a specialty coffee project founded in 2016 in Bajawa by Ikang M. Hendri. Its goal is to improve the income of local producers through innovative farming and processing practices. Today, more than 110 small producers take part in the project. The coffee trees are grown in a traditional agroforestry system, under the shade of fruit and forest trees. For this lot, the cherries were depulped, then fermented with the integration of Nira yeast for 48 hours. They were then washed and dried according to a traditional washed coffee approach.”
