“From Mahataman Coffee Bajawa in Bajawa, Ngada, Flores Island, Indonesia. Founded in 2016 by Ikang M. Hendri, this project includes over 110 smallholder producers. The cherries are grown in traditional agroforestry systems and dried using a natural process with yeast added at the beginning of fermentation to support aromatic development.”
