“Unakki Estate sits in the Joldal Palya region of Chikmagalur, 115 acres of arabica intercropped with banana, orange, avocado and pomegranate under native shade trees. The estate is managed by P.E. Suresh, an advocate and fourth-generation planter, with his wife Y.J. Sahara and son Utsav Gowda, who runs day-to-day operations while finishing his law degree. This Chandragiri lot is pulped, fermented for 12 hours, washed clean and dried over 9 to 12 days: cane sugar, apricot, honey and a balanced, daily-drinking cup.”
