“Sandalwood Estate has farmed shade coffee in Suntikoppa, Coorg since 1892, held by one family since 1949, and this washed Sarchimor is its straight-ahead house expression of the place. Cherries are pulped, fermented until the mucilage breaks down, washed in clean water and dried to a stable moisture, which keeps the cup articulate rather than heavy. Dried raisin and stone fruit open it, tea-like florals and a mosambi tang follow, and a gentle bitterness closes a clean, full-bodied finish.”
