“Ratnagiri Estate spreads 117 hectares through the Western Ghats near Bababudangiri, where the Patre family has farmed since 1927. This CxR Robusta grew on the Seed Patte block at 4,500 ft and was picked at an exceptional 27.8 Brix. Ashok Patre inoculates the cherries with lab-grown cultures, ferments them 36 hours under CO2, shocks the bioreactor from 41 C down to 3 C, then dries them 29 days on raised beds with constant stirring.”
