“Ratnagiri Estate is a 117-hectare shade farm in the Western Ghats near Bababudangiri, the birthplace of Indian coffee, and the Patre family has worked it since 1927 under silver oaks intercropped with pepper. For this classic lot, ripe cherries are pulped, fermented once to break the mucilage, washed, then fermented and washed again before slow drying on raised beds under the mountain sun. NAIVO roasts it medium: tea rose and citrus blossom on the nose, licorice spice and roasted pecan on the finish, with a juicy, driving acidity.”
