“Ratnagiri Estate is a 117-hectare shade farm in the Western Ghats near Bababudangiri, the birthplace of Indian coffee, and the Patre family has worked it since 1927.This Catuai comes off the Kere Patte block at 4,250 ft, picked at 24.9 Brix. Ashok Patre ferments the cherries 72 hours in bio-fermenters with lab-cultured microbes, lactic acid bacteria and strawberry pulp, then dries them six days at a controlled 20% humidity. Raspberry and mixed fruit jam lead into a distinct strawberry cheesecake middle.”
