“Ratnagiri Estate is a 117-hectare shade farm in the Western Ghats near Bababudangiri, the birthplace of Indian coffee, and the Patre family has worked it since 1927.This Catuai is Kere Patte fruit at 4,250 ft, harvested at 24.9 Brix. Ashok Patre runs it 72 hours in bio-fermenters with lab-cultured microbes, lactic acid bacteria and peach pulp, then dries the cherries six days at 20% humidity. Peach candy and muskmelon lead the aromatics, but the cup turns to ripe cantaloupe, with syrupy peach and a crisp star fruit finish.”
