“Ratnagiri Estate is a 117-hectare shade farm in the Western Ghats near Bababudangiri, the birthplace of Indian coffee, and the Patre family has worked it since 1927.Cauvery from the Line Patte block at 4,400 ft, picked at 24.9 Brix. Ashok Patre inoculates the cherries with lab-grown cultures, runs a 54-hour anaerobic fermentation in bioreactors, then shocks them from 43 C to -2 C before 15 days of slow drying in a dehumidified dark room. Green grape and Asian pear lead, apricot softens it, red plum jam and crisp acidity close.”
