Highlights
“Lisandro Cardenas grew up among coffee trees, trained through Colombia's SENA programme, and nearly a decade ago planted his own five-hectare farm in Huila, where volcanic sandy loam and 1,400 to 2,000 metres suit Geisha. The cherries are hand-sorted and dried whole on raised parabolic beds for 18 to 25 days, turning regularly so the fruit sugars settle into the seed. The cup opens on cherry cola and ripe banana, moves through blueberry and elaichi spice, and finishes long and syrupy.”
