“This fully washed lot comes from Coocentral, a farmer-owned cooperative in southern Huila uniting more than 3,400 small-scale growers. Most members farm two to three hectares between 1,400 and 2,000 metres above sea level, growing Caturra, Castillo and Colombia varieties in rich volcanic soil. Cherries are hand-picked at peak ripeness, fermented for 24-36 hours, then washed and sun-dried on covered beds. Since 2005 the cooperative has invested over US$2.8 million in scholarships, healthcare and farm improvements for its members.”
