Highlights
“El Rancho sits in Alto del Obispo, outside San Agustín in southern Huila, and has belonged to the Cadefihuila growers' association since 2013 — 3,500 members across 28 municipalities, most farming two or three hectares, with the farm used to grow specialty varieties and push processing experiments. Ombligon, named for the pronounced navel at the base of the cherry, is a rare variety grown almost entirely in Huila and generally traced back to Ethiopian landrace coffee. This lot grew at 1,750 metres. The process is an extended, multiphase inoculation: 36 hours sealed in bags, then 36 hours submerged in mucilage inoculated with a culture the team had kept alive on panela for a month, followed by double rinsing, a single 60°C thermal shock and dehumidifier drying down to target moisture in five days. It reaches Mudhouse through Paisa Coffee, founded by Yolima Taborda Rojas.”
