Highlights
“El Porvenir is Nicolas and Angela's farm in the mountains of Jinotega, Nicaragua, where the couple work the harvest side by side, in a family that now counts twelve grandchildren. They are members of Gold Mountain Coffee Growers, a direct-trade group that handles its own exporting and importing, so the coffee reaches Mudhouse without anyone in between. During picking a ripeness team checks baskets with refractometers, and every lot is sorted again on the drying beds, by machine, under UV light and by hand. This nanolot is 100% Red Catuai grown at 1,450 metres. For the natural process the ripest cherries are carried down the mountain whole in ventilated boxes and dried on raised beds for about a month, turned constantly so the sugars work into the seed.”
