“Jamison Savage is a former financier who moved to Panama and built Finca Deborah on the slopes of Volcán Barú. He is one of the most recognized Geisha producers working today. Echo is a washed Geisha processed with carbonic maceration: whole cherries are infused with cascara and sealed under CO2 pressure before the washed finish. The fermentation adds depth without covering the floral character of the Geisha. Sold in 80g tins.”
