“A standout microlot from Volcán Azul, the Costa Rican estate farmed by the Jiménez-Kahle family for over 200 years. This Caturra is washed, then undergoes a double fermentation - a short initial fermentation in cherry, controlled centrifuge pulping, then a second phase before slow drying over 6-10 days on raised beds and low-temperature mechanical dryers. The result is a clean, fruit-forward cup with exceptional balance. Under Alejo Kahle Castro, the farm has placed consistently in the Cup of Excellence, including 2nd place in 2017.”
