“A rare Mocha-variety microlot from Hacienda La Unión, farmed by fifth-generation producer Alejo Kahle Castro and processed at the renowned Volcán Azul micro-mill. Mocha is one of the oldest Arabica varieties - naturally tiny, low-yielding and intensely sweet. Cherries are picked at peak ripeness (22-30 brix), fermented in sealed anaerobic tanks with the farm's own native yeasts, then dried slowly over 7-16 days. The Castro-Kahle family has grown coffee here since the 1840s, with multiple Cup of Excellence rankings across their farms.”
