“Duberlí Jimenez farms at Tabaconas in Cajamarca, on the eastern side of northern Peru where the Andes drop toward the Amazon. His lot is a washed coffee from native cultivars growing around 1,750 metres, and Monotono roasts it light in Barranco, the Lima neighbourhood where Piero Alva and Hibeth Rodríguez run their coffee bar. The cup is built on mandarin and yellow plum, with blueberry sweetness and a caramel finish rather than the sharper citrus you get from higher-grown Cajamarca lots. Sold as 200 g bags.”
