“Finca Bethania is a 42-hectare farm in Macueliza, Nueva Segovia, established in 1991 and run by Martha and Ana Albir, third-generation coffee growers. Their family's lands were taken during the Nicaraguan revolution. They founded dry mill Cafetos de Segovia in 2015, which now serves 47 local producers. This Java was washed and dried in shade on patios for 5 days, then finished in the sun.”
