“Finca El Alisal is a renowned coffee farm in Fundochamba, southern Ecuador, run by the Jaramillo family for over 60 years. Since Leonidas Jaramillo took over in 2017, the farm has focused on specialty coffee and high-scoring varieties. Typica Mejorado is a rare cross between Bourbon and an Ethiopian landrace, grown at 2000 masl. After picking, the cherries are oxidized before depulping and washing, then dried in polyshade greenhouses for 12 to 15 days.”
