“Linarco Rodriguez leads Tierra Diversidad, a collective of 117 smallholder farmers in Palestina, Huila, Colombia. The group farms traditionally without chemical inputs, and Linarco's work on cultivation and processing has lifted the quality of both his own coffees and the wider community's. This Pink Bourbon was grown at around 2,000 metres on Finca Betania and neighbouring smallholder plots. Prepared specifically for competitions, the lot follows a more exacting protocol than his regular production: individual trees, picking areas and cherries are selected and kept in much smaller batches, so each stage from cherry selection to fermentation and drying gets closer attention. Hand-picked cherries are fermented in water, thoroughly washed to remove remaining mucilage, slowly dried under controlled conditions and rested in Tierra Diversidad's warehouse before export.”
