“Luis Valdez is a third-generation producer working two farms in Alta Verapaz, Guatemala, and this lot comes from Finca San Lorenzo at 1,500 masl, a region with year-round rainfall. He grows caturra, catuaí, bourbon and several experimental varieties across more than 70 hectares. Mirra picked it for its white-coffee line, roasted to hold up to milk, and the cup is stewed pear, speculaas cookie and caramel.”
