“Santa Cruz de Ozolotepec is METRIC's newest lot from the Ozolotepeques, a cluster of remote Zapotec municipalities high in the Sierra Sur of southern Oaxaca. Working through Red Beetle Coffee Lab, the roastery has sourced from smallholders here for six years, and this lot brings together nine farmers each contributing around 75 kilograms of parchment. Varieties run to Marcellesa, Oro Azteca and Typica, grown between 1,400 and 1,700 metres. The warmer climate here shortens fermentation and speeds drying, so poly-shade netting is used to slow the process and protect quality.”
