“Finca Las Flores was established in 1990 by Edilberto Vergara and Nubia Ayure in Huila, Colombia. Today, brothers Diego and Jhoan Vergara continue the family legacy with a focus on rare varieties, careful processing, and expressive lots. Diego manages fermentation, drying, and quality control, while Jhoan explores new processing methods. This lot features Chiroso, a lesser-known Arabica variety prized for its sweetness, complexity, and distinctive elongated bean shape. Genetic testing suggests Chiroso may be linked to Ethiopian Landrace varieties.”
