Highlights
“Mount Totumas lies twenty kilometres northwest of Volcán, as high as the Tierras Altas reach, pressed up against the La Amistad international park. Part of the farm is a private cloud forest reserve, and the coffee grows under the forest rather than in place of it. This one is not a geisha, and that is exactly why we love it. The trees are Ethiopian landrace material, and Miiqa is the name of the lot rather than the variety. The cherries ferment cold before they go to dry. What comes out is dark and berried rather than floral. Blueberry and raspberry lead, cocoa sits underneath, and a soft rose note arrives late. It tastes closer to a fine Ethiopian natural than to anything else we have found in Panama, which is why we keep coming back to it.”
