Highlights
“La Cascada comes from Camiseta, the Suárez family's farm in El Salto, the cool high ground above Boquete on the road up to the Volcán Barú National Park. The family has grown coffee in El Salto since 1948, and today Carlos and Laura Suárez run the farms as El Salto Premium Coffee. Camiseta sits at 1780 masl. This Yellow Bourbon lot was picked on 21 January 2026; the cherries were floated and sorted by hand, then sealed in tanks for 48 hours before drying whole. They dried 29 days in the shade on African beds, cooled by the mountain breeze, and finished with 12 hours in a static dryer at 37 °C.”
