“Grown by Itto at 1,823 meters above Volcán in Chiriquí, Panama, this Geisha comes from eleven-year-old trees picked by hand at full ripeness. Every lot comes off the same trees; what changes is how Itto ferments and dries the cherry. Each pick is even timed to the moon phase. Three processes — washed (lot 2103), natural (lot 2302), and honey (lot 0303) — offer three distinct expressions of one Geisha terroir.”
