“Oscar and Francisca Chacón, third-generation producers at Las Lajas in Costa Rica, joined the country's early micromill movement in 2005. When a 2008 earthquake knocked out their water and power, Francisca built raised beds inspired by African drying techniques — a resourcefulness that became Las Lajas's calling card. This Perla Negra lot uses a natural process built for patience: ripe cherries with high sugar content spend a week on raised beds, then rest in the shade before finishing on the greenhouse patio. The extended timeline, up to a month, gives the coffee deep, layered sweetness.”
