“Sourced from the highlands of Yirgacheffe in southern Ethiopia, Chorso Bule represents a micro lot that feels both classic and quietly distinctive. At elevations exceeding 2400 meters, cherries mature slowly in cooler conditions, allowing for greater sugar development and more refined acidity. This lot is built from the work of 11 smallholder farmers, each cultivating small garden plots using traditional Ethiopian landrace varieties. All cherries are handpicked at peak ripeness and delivered to the Chorso Bule washing station, then dried slowly over 25 days on raised African beds.”
