“La Aya is a Sudan Rume lot from Café Pacas, grown across the fincas La Esperanza and El Retiro in the Apaneca Ilamatepec region of El Salvador at 1,400 metres. The Rume variety, originally from South Sudan, is prized for sweetness, floral aromatics and refined acidity; María Pacas chose a natural process for this lot and named it after her sister Aida. It belongs to Café Pacas' Incunables collection, the family's most exclusive range, and is released as part of Man versus Machine's Tantalum Edition.”
