Highlights
“Nestor Lasso and his brother Adrian are third-generation growers in Pitalito, Huila, who took over the family farm and built Finca El Diviso with neighbour Jhoan Vergara of Las Flores into a project devoted to micro-lots and precise post-harvest work. For this lot the cherries fermented anaerobically for 20 hours, then a further 16 hours in smaller batches before pulping and washing; the parchment was then submerged for 18 hours in water inoculated with leachate from previous harvests and mechanically dried. Machina roasts it as an espresso, where the candy-like sweetness and juicy acidity land as sticky strawberry, tinned peach and a dark chocolate finish.”
