Highlights
“Iris Estate Geisha Symbiosis comes from Iris Estate, a farm on the western slope of the Barú volcano in the Volcán area of Chiriquí, Panama, planted between 1,850 and 2,300 m. The farm was founded by three specialty coffee figures — Jamison Savage (who also runs nearby Finca Deborah), 2015 World Barista Champion Saša Šestić and Elvin Siew — and the coffee reaches MABÓ through Project Origin, the ethical trading company associated with Šestić. At this altitude the Green Tip Geisha cherries ripen very slowly: cold nights, tropical forest shade and the land's orientation to the sun give each lot time to build sweetness, and the farm works with regenerative agriculture under forest canopy. Symbiosis is processed as an Extended Natural Anaerobic. Cherries are picked at 21-24 Brix and sorted a second time before entering sealed tanks for 100 hours with no added inert gas, where fermentation generates its own CO2 and the bean slowly absorbs the fruit's aromatics while temperature and pH are tracked several times a day. The cherries then dry for about 20 days on three-tier raised African beds in a climate-controlled room, turned constantly until moisture reaches 11%, before resting in GrainPro in a cool warehouse. In the cup it develops jasmine, strawberry, dried mango and clementine, with red grape and cherry, vivid acidity and high sweetness.”
