Highlights
“The Costa Rica 95 variety is a genetic material from the Catimor family, developed by the Costa Rican Coffee Institute (ICAFE). Its lineage is the result of a controlled cross between the Timor Hybrid and the Caturra variety. Although of Central American origin, its introduction to Colombia marked a significant evolution in coffee cultivation across several regions. Currently it is a prominent variety in Huila and Nariño, where the combination of volcanic soils and high altitude has let CR-95 express a complex sensory profile, surpassing the standard quality of other commercial Catimors. Pablo Guerrero and his team of pickers harvest only the ripest cherries, which are hand-sorted and floated at El Obraje farm before a 30-hour underwater fermentation under the Cofinet protocol. After fermentation the cherries are pulped, the mucilage washed away, and the coffee dried on raised beds to a 9.5-11% moisture content.”
