“Jairo Arcila, a third-generation coffee grower from Quindio, Colombia, cultivated this exceptional Caturron lot at Finca Buenos Aires. The Caturron variety is a rare mutation of Caturra, first discovered in Acevedo, Huila, known for its resistance to leaf rust and high yield. After selective harvesting, the cherries undergo a 45-hour aerobic fermentation that highlights intrinsic flavors, then are dried on raised beds for 8-12 days. The result is a complex, intensely fruity profile with remarkable sweetness.”
