“Bare is a kebele in Bona Zuria, Sidama, where the Tulu family's station buys ripe cherry from smallholders; manager Tsegab Ayele inherited it after Beshu Tulu died. Cherry is hand sorted, floated for density and sorted again, pulped, then fermented with only a thin mucilage layer left for a white honey and dried slowly on shaded beds.”
