“The Juanachute micromill was one of the first of its kind, pioneered by Luis Anastasio Castro, known as Tacho. The operation spans several plots in Costa Rica's Los Santos region, including a plot in Santa Maria de Dota where this coffee was grown. This lot underwent honey processing: freshly harvested cherries were fermented for 48 hours, pulped with water, then dried on raised beds under full sun before finishing in a drum drying oven over 25 days.”
