“Wilton Benitez is a renowned producer from Colombia's Cauca region, known for his meticulous processing and high-quality coffees. This decaf lot comes from Granja Paraiso 92, his farm, and uses the Anaerobic E.A. (ethyl acetate) process. The coffee is sourced by Macarena and imported to Little Wolf, a Massachusetts-based roaster founded in 2016. The beans are grown at elevations between 1,900 and 2,100 meters, where the Red Bourbon variety develops complex flavors even after decaffeination.”
