“This Natural Pacamara comes from Savage Coffee, the Panama project led by Jamison Savage that brings together small producers from Boquete and Volcán on the slopes of the Barú volcano. Whole cherries are dried slowly on shaded raised beds inside a climate-controlled drying house, with regular turning to even out the dry and build sweetness, fruit and complexity. Each exclusive lot is vacuum-sealed and shipped under climate-controlled conditions to preserve its quality.”
